As Jamaican chefs are preparing to participate in the Caribbean Hotel Association annual conference in San Juan, Puerto Rico, they found the perfect forum to display their abilities and creativity during the dinner set to sample their original culinary masterpieces. Sans Souci Lido Resort, in conjunction with the Chaine des Rotisseurs, held an elegant evening of food, wine, and camaraderie on April 29.
The Chaine is an international organization founded in France in 1950. Its goal is to bring together people of varied backgrounds and careers who share a common love of fine foods and wine. Mr. Kermit Tucker, President of the Jamaican chapter, also serves as special assistant to the president of the Atlantic/Caribbean Islands Region.
Chef Jack Shapanski of Ciboney is the Jamaican Culinary Team’s leader and, under his supervision, the group presented an enticing menu utilizing Jamaican-grown products in very innovative ways. As their efforts are geared for the upcoming competition, I’m not able to divulge the tasty details.
